Fill fryer to appropriate level and set temperature to 325ºF.
Separate zucchini blossoms, placing into the fryer one at a time. Be careful to keep blossoms apart from each other; they’ll cook more evenly if they are separated. Fry until the blossoms turn a deep golden brown. You may have to flip them to achieve a uniform color.
Using tongs or a spatula, carefully remove the fragile fried flowers from the oil and place on the paper towels to drain. Season lightly with salt.
When they have cooled enough to touch, transfer the blossoms to the baking sheet. Drizzle just a taste of honey and cinnamon on top, and serve.
